Try something new this Memorial Day…or make what you already do better! Here’s a great recipe for some turkey burgers. If you buy the lean ground, it has much less fat than beef burgers

These burgers are super easy and super healthy!

1 1/4 pound ground turkey
1 each red, green and yellow bell pepper
1 white onion
1 Tbs. olive oil
1 egg, slightly beaten (can use Egg Beaters as well)
3 Tbs fresh bread crumbs or panko — or even oatmeal!

Preheat grill to medium/high.  Slice the peppers and the onions into strips.  Toss the vegetables with the olive oil, and grill on a perforated pan, turning frequently, until brown and soft.  Remove from grill and cover.  Let sit for about 5 minutes (this “sweats” the vegetables just a bit).

Chop half of the vegetables, and mix gently with the turkey, egg and crumbs.  Shape into patties.

Grill, turning once, until cooked.

** the remaining vegetables are great as a side dish, or tossed with pasta for another meal!
